The eggs spawn random villagers, but I keep them locked in stalls with three barrels - I wait a few days but the villagers keep the job they spawned as. I also tried to spawn zombie villagers and cured them, but again they cured as random villagers and didn't change jobs after a few days.
Probably the best way would be to just make the spawning room so that you can turn on redstone lights around it to deactivate it. Then let it spawn zombies and keep killing them until you get a zombie villager to spawn. Deactivate the spawner, kill off any remaining regular zombies, then lure out the zombie villager into a curing cell.

When you're in Peaceful Difficulty, all hostile mobs (creepers, skeletons, spiders, ect.) won't spawn in the world & any mobs that are in the game prior to changing to Peaceful will immediately despawn to comply with the Difficulty restrictions. This also means that hostile spawn eggs will fail as well.
Zombie village is a rare occurrence in Minecraft - the Zombie village only has a 2% chance to spawn. It is populated with zombie villagers and doesn't have doors or torches. There is a 10% that zombies will spawn in the village at midnight and if there are at least 20 villagers and 10+ doors, a zombie siege will occur.
